A chewy, healthy, high protein granola bar!

There’s something so satisfying about having a homemade snack waiting in the kitchen. These High Protein Granola Bars are packed with hearty oats, creamy peanut butter, coconut, crunchy walnuts, chewy dried cranberries, and plenty of chocolate chips.

They’re sweet, nutty, chewy, and just chocolatey enough to feel like a treat while still being made with simple ingredients you can recognize.

I especially love making a batch on the weekend so we have an easy grab-and-go option for busy mornings, afternoon snacks, or those moments when everyone suddenly announces that they’re hungry.

And, of course, the little sprinkle of chocolate chips on top is completely optional, but highly encouraged.

Why We Love These Granola Bars

Homemade granola bars are surprisingly easy to make, and there’s something lovely about being able to customize them to suit your family.

These bars combine oats and protein powder with peanut butter, walnuts, coconut, and dried cranberries. The honey adds sweetness, while coconut oil and peanut butter help create that delicious chewy texture.

They’re also a great recipe to make together with kids. Little hands can help measure the dry ingredients, stir the mixture, or sprinkle those all-important chocolate chips over the top.

Ingredients

Here’s what you’ll need to make these hearty homemade granola bars:

  • 3 tablespoons coconut oil – Helps bind the ingredients and adds a subtle coconut flavor.
  • ½ cup peanut butter – Adds richness, flavor, and protein. Creamy peanut butter works especially well.
  • ⅓ cup honey – Provides natural sweetness and helps hold the bars together.
  • 1 teaspoon vanilla extract – Adds a warm, sweet flavor.
  • ⅓ cup milk – Helps bring the mixture together and keeps the bars tender.
  • 2 cups oats – The hearty base of the granola bars.
  • 1 cup vanilla protein powder – Adds protein and a little extra vanilla flavor.
  • ½ teaspoon salt – Balances the sweetness.
  • ½ cup shredded coconut – Adds texture and a little tropical sweetness.
  • ½ cup chopped walnuts – Gives the bars a delicious nutty crunch.
  • ½ cup dried cranberries – Adds chewy bursts of fruity sweetness.
  • ½ cup chocolate chips – Because chocolate makes everything better.

You can also keep a few extra chocolate chips aside to sprinkle over the top before baking.

How to Make High Protein Granola Bars

1. Prepare your pan

Preheat the oven to 350°F (175°C).

Line an 8×8-inch baking pan with parchment paper, leaving a little overhang on the sides. This makes it much easier to lift the bars out once they’ve cooled.

2. Melt the wet ingredients

Add the coconut oil, peanut butter, and honey to a saucepan.

Warm gently, stirring until everything is melted and smooth. You don’t need to bring the mixture to a boil—just warm it enough for the ingredients to combine.

Remove from the heat and allow the mixture to cool for a few minutes.

3. Add the vanilla and milk

Once the peanut butter mixture has cooled slightly, stir in the vanilla and milk.

Mix until smooth and well combined.

4. Add the dry ingredients

Add the oats, vanilla protein powder, salt, shredded coconut, chopped walnuts, dried cranberries, and chocolate chips.

Stir everything together until all of the dry ingredients are coated and the mixture comes together.

It will be thick, which is exactly what you want.

5. Press into the pan

Transfer the mixture to your prepared pan.

Using the back of a spoon, spatula, or clean hands, firmly press the mixture into an even layer. Take your time with this step—the more firmly you press, the better the bars will hold together.

Sprinkle a few extra chocolate chips over the top for good luck. This step is technically optional, but I won’t judge if you add a generous handful.

6. Bake

Bake for 18–20 minutes, until the edges are lightly golden and the bars are set.

Try not to overbake them, as you want them to stay soft and chewy.

7. Cool completely

Let the granola bars cool completely in the pan before cutting them.

Allowing the bars to cool gives them time to firm up, making them much easier to slice.

Once cool, lift them out using the parchment paper and cut into bars or squares.

A Little More About the Nutrition

One of the things that makes these granola bars especially satisfying is their protein content. Between the vanilla protein powder, peanut butter, milk, and walnuts, each bar gets protein from several different ingredients.

Protein is an important part of a balanced diet. It helps support the growth and maintenance of muscles and other tissues, and including protein with a snack can help make it feel more substantial and satisfying.

Where Does the Protein Come From?

Vanilla protein powder is the biggest protein contributor in this recipe. Using one cup of protein powder throughout the batch means that the amount of protein in each bar will depend on the brand and how many bars you cut the recipe into. Be sure to check the nutrition label on your particular protein powder for the most accurate amount.

Peanut butter adds another boost of protein, along with fats that contribute richness and help make these bars satisfying.

Walnuts provide a smaller amount of protein while adding healthy unsaturated fats and a delicious crunch.

Oats also contribute protein, along with carbohydrates and fiber, making them a nourishing foundation for a homemade snack.

Milk adds additional protein as well as nutrients such as calcium, depending on the type of milk you use.

Together, these ingredients create a snack that offers more protein than many traditional granola bars, while still tasting like something you’d genuinely look forward to eating.

A Balanced, Satisfying Snack

I love that these bars aren’t just about protein. They combine protein with carbohydrates, fats, and ingredients such as oats, nuts, and dried fruit.

The oats and honey provide carbohydrates for energy, while peanut butter, walnuts, and coconut contribute fats and flavor. Dried cranberries add sweetness and chewy texture, and the chocolate chips make the bars feel like a little treat.

It’s this combination that makes them such a nice option for a busy afternoon, after an active day, or whenever you need something a little more substantial between meals.

Protein for the Whole Family

For adults and older children who enjoy protein-rich snacks, these bars can be an easy homemade option to keep on hand. Pairing one with fruit, yogurt, or a glass of milk can make an even more substantial snack or small breakfast.

If you’re serving these to children, keep in mind that protein needs vary considerably by age, and more protein isn’t necessarily better. Young children generally need appropriately sized portions of a variety of foods rather than high-protein foods specifically.

For toddlers and younger children, pay particular attention to the texture and ingredients. These bars contain peanut butter and walnuts, so they should only be offered in a form and portion that is appropriate for the child’s developmental stage, and children should always be supervised while eating. Check with your child’s healthcare professional if you have questions about appropriate foods or protein needs.

How Much Protein Is in Each Bar?

The exact amount will depend on your protein powder, milk, peanut butter, and how many bars you cut from the pan.

For the most accurate nutrition information, add the nutrition information from each ingredient using the specific brands you purchase, then divide the total by the number of bars.

This is especially important with protein powder, as protein content can vary significantly between brands and serving sizes.

Tip: If you’re specifically making these as high-protein snacks, look for a protein powder with a higher amount of protein per serving and use the package nutrition information when calculating the final protein content.

A Few Simple Tips

Press firmly. Really pack the mixture into the pan before baking. This helps the bars hold together.

Don’t overbake. The bars should be set and lightly golden around the edges but still soft.

Let them cool. They become much easier to cut once completely cooled.

Make them your own. You can experiment with different dried fruit, seeds, or chocolate chips to suit your family’s tastes.

Storage

Store the cooled granola bars in an airtight container. For the best texture, keep them refrigerated if your kitchen is warm.

They make an easy snack to prepare ahead of time, so you can have homemade bars ready whenever you need them.

Homemade Snacks Just Feel Better

There’s something comforting about making snacks at home. Maybe it’s knowing exactly what went into them, or maybe it’s simply the smell of peanut butter, coconut, and chocolate baking together.

Either way, these High Protein Granola Bars are the kind of recipe that’s worth keeping in your regular rotation.
