Description

These cookies are soft and chewy and filled with mini eggs for the perfect crunch! I make these every year for Easter and even other times throughout the year because they are that good!

Ingredients

1 cup butter
½ cup granulated sugar
½ cup brown sugar
1 egg
1 tsp vanilla
2¼ cups flour
¾ tsp baking soda
½ tsp salt
1 cup crushed mini eggs

Instructions

Preheat oven to 350°F.
Mix butter and sugar until creamy.
Add egg and vanilla and mix.
Add the dry ingredients and mix. It will be crumbly at first but keep mixing.
Add in the crushed mini eggs and mix.
Scoop onto prepared cookie sheets and bake 10-12 min.

Makes about 2 dozen cookies
